Boil and few chiles, chop a few things and blend it? Yes.
Here’s a quick, tasty and easy salsa that goes well with just about anything. (recipe below)
Fire Roasted Salsa Fresca
Ingredients:
4 chile guero (yellow/white chiles)
2 serranos peppers
2 jalapeno peppers (sub one chipotle pepper in adobo for smokiness)
1/2 cup chopped cilantro
2 limes - juiced
1 TB caldo de pollo or kosher salt + one TB salt to boil
1 can fire roasted tomatoes
1 whole garlic clove peeled
1 bunch of green onions - sliced
1.25 cup of water that you used to boil the chiles
Directions:
1. Clean the produce thoroughly.
2. Place all the chiles and garlic in enough water to cover them and bring to a boil. Add 1 TB salt. Boil for 10 minutes.
3. Cut the end off the jalapenos and chile gueros and take the seeds out.
4. Place all ingredients (including the water used to boil) with half of the green onions and cilantro in a blender and blend until slightly chunky.
5. Pour salsa into a bowl and add the rest of the green onions and cilantro. Chill it and serve.
